My long-awaited return to Iceland would be equally special, sharing my favorite country with the special lady who stole my heart. Geothermal hot springs, roaring waterfalls, black-sand beaches, dramatic landscapes, and adorable puffins made this short holiday one for the ages.

Beautiful place for a couples' road trip! We decided to plan our own trip rather than do the usual Dubrovnik and coastal route, and had a great time. The rare chance to board down an active volcano brought me to this underrated Central American gem. Wild Pacific waves, motorbiking around a volcanic island inside a freshwater lake, and soaking up the sunshine at a laid-back surfer hub made the week-long adventure unforgettable.
